Spicy Chicken and Blue Cheese Nachos

  • 16 oz. Boston Market pulled rotisserie chicken
  • 8 ounces of your favorite hot sauce
  • 1 large bag of your favorite tortillas chips
  • 2 cups grated jack cheese (approximately — you may need more or less)
  • 1 cup of your favorite blue cheese crumbles
  • 1/4 cup fresh jalapeno slices
  • 3 tomatoes, finely chopped
  • 3 green onions, green and white parts, finely chopped
  • 1/4 cup Sour Cream


  • Preheat the oven to 350 degrees.
  • Shred the chicken with 2 forks then place shredded chicken in a bowl. Add hot sauce and toss well. Coat all the chicken with sauce.
  • Spread a layer of tortilla chips on to two ovenproof plates or baking dishes. Spread evenly with jack cheese and blue cheese, then a layer of chicken. Repeat twice making each layer a little smaller than the last one. Finish with an extra sprinkle of cheese. Bake just until the cheese melts, 5 to 10 minutes.
  • Serve one dish as is. On the other, layer on the jalapenos, tomatoes, scallions, and sour cream.
